If you like big flavors, this one' s for you! Fortunate were the peasants who ate these simple, satisfying cheeses every day with a hard cider, ale, or local wine. Both these raw milk chevres are aged from 4-8 months, & both are wonderfully earthy. The Old Kentucky smells like the first turning of the spring garden-moist, mellow, & mushroomy. The Mont St. Francis is our big, bad guy-a little stinky like a French Muenster but every bit as wonderful, beefy, and sweet. Very Italian & good with everything-wine, beer, & even bourbon!
