This is a favorite sampler for all who love the ripened chevres of France. These cheeses begin with light, creamy curd. The Pyramide & Sofia are then hand ladled directly into molds & ripened at cave temperatures to encourage a wrinkly, white mold rind. The Cannonball is shaped by hand & sprinkled with ash. As they ripen, the mold rind alters the cheese, sweetens & gives it earthiness, & a velvety, dense texture . Each is delicately different from the other. All are rich but not cloying, & a light & lovely way to finish any meal!
