Aged from 4-8 months under natural rinds, our raw milk cheeses truly reflect the flavors of our farm-it's fields, animals, & our craft. The earthy, Old KentuckyTomme has overtones of mushrooms under its mottled grey-white rind, & smells like moist ground when it's first turned in the Spring. Mont St. Francis is a big boy-beefy & stinky like the best French Muenster. This is the typical "nose" of a washed rind cheese & at Capriole we love this smell that promises great flavor! All of  these aged chevres pair beautifully with our Spanish Fig Cake, flavored with anise, sesame seeds, & liqueur. They make a simple, but wonderful dessert. For other times, try these with a bitter ale-equally as wonderful!
