Chevre Rounds |

After the soft, lactic curds of a fresh goat cheese are ladled into molds, they are turned, drained, salted, drained again, and then turned out on trays to dry overnight. The result is a disc of fresh chevre that's smooth, rich, and silky in the mouth, with a flavor that's lemony, and fresh, with an underlying sweetness. Lower in cholesterol and calories than cream cheese, these light, lofty rounds are then vacumned to insure their freshness. It's always surprising that such a delicate, mild cheese can pack so much flavor and exceptional texture. Plain or herbes de provence.
Pairings: Either sweet (honey, acidic fruit preserves, dates) or savory (tapenades, salsas) work well with these cheeses. They pair well with light, acidic wines like sauvignon blancs. |
